Like a regular Stone Talus, they have a chunk of ore that serves as a weak spot. Link can't climb to reach it because of the spiky defenses built under the platforms. But after getting rid of the Bokoblins, he can use Ascend Ability to move through the platforms and reach the ore chunk.
